My almost 2-year old is picky but he's still too young for it to be a real battle. I'm ok with feeding him goldfish, peanut butter and penne pasta for the next decade or so. Mostly because I remember VERY VERY CLEARLY - to the point that I can still taste it in my mouth when I think about it - and incident where my dad insisted I eat what my mom had made for dinner before I was allowed to leave the table. It was some sort of tortellini soup, which I'm sure was actually delicious, but something about the texture and smell grossed me out (I was 9 or 10 at the time and lots of things grossed me out). Choking down the required 3 bites means I have NEVER NOT EVEN ONCE since then eaten a tortellini.
Power struggles over food never end well, so you are definitely making a wise choice (says the person who still thinks of that story EVERY TIME she sees a tortellini, 20 years later).
